Amboli is a soft, spongy pancake made with fermented rice and urad dal batter. It is often compared to South Indian dosa. This versatile dish can be served with a variety of chutneys, curries or just butter. Though it’s common in most Konkan homes as breakfast, it can be taken at any time throughout the day. That is to say that the mild flavour and delicate texture make it a perfect match for the spicy and tangy curries that Konkan cuisine is famous for.
